Yesssss, just like chocolate pudding in a pie!

I’m the fillin’!

For this wintry month, I am giving you a little culinary gift!

It is my own twist on a favorite dessert or breakfast bread: banana bread. Or, as I like to call it: BananaManna!

I served up this recipe last spring for my besties Cassie and Sofia during one of our investigation sessions and they demanded I make more for lunch the next week at school!

As I mentioned in my last blog, ever since our story was written about in the book Along the River Road by S. C. Ashby, I’ve been gettin’ Tumblr requests and emails for some of the snacks mentioned in the book.

This recipe is truly manna from heaven (or at least the oven!). I keep it simple by using a store-bought mix and then adding such delicious-ness as bananas and chocolate ice cream. Make sure your bananas are on the soft-side, as it makes mashing easier and the mash less firm. There is nothing I love more than the combination of chocolate and banana—yummy-licious!

Ingredients

  • Use your favorite pound cake mix and follow the directions on the package, except for the water or milk ingredient!! Now, I am partial to my girl Betty’s mix, but you use what you like!

Typically, these mixes will take the following ingredients (but exact ingredients and amounts will vary):

  • water (or milk)*,
  • butter (or margarine or canola oil),
  • 1 or 2 eggs
  • 3 softened bananas
  • *Replace the water/milk with the same amount of softened chocolate ice cream (Get the good kind made with real milk and sugar– not the cheap stuff!)

 

Directions

  1. Preheat oven to 350o.
  2. Mash bananas in a large mixing bowl and then whip in the softened chocolate ice cream and softened butter/margarine or use canola oil.
  3. Add the pound cake ingredients from the box and thoroughly mix.
  4. Lightly spray the loaf pan with your favorite cooking spray.
  5. Follow the package directions for baking (Typically, it bakes for about 50 minutes.). Test for doneness using a toothpick. Stick the toothpick into various areas across the top of the bread especially in the middle. The bread will be done when the toothpick comes out clean each time.
