
Ever since our story was written about in the book Along the River Road by S. C. Ashby, I’ve been gettin’ Tumblr requests and emails for some of the snack recipes mentioned in the book.
So, when the author S. C. contacted me and asked me to guest blog once a month, I yelled into the phone, “Yes-and-I-know-exactly-what-I-want-to-share!”

Okay, so for this first recipe, this is a take on my fav peanut butter squares that they used to serve in the cafeteria of my old elementary school. These are a lot of effort to make, and you will be hungry by the time you are done makin’ ‘em, but they are well worth it. If you don’t want to melt your own semi-sweet chocolate chips, then get your own bottle of chocolate fudge topping (like they use on ice cream).
I love serving these as my finger-food snacks between rounds at game night. They also pack up nicely in plastic sandwich bags for lunch or field trip! Do allow time of at least 1 hour for refrigerating AFTER you have prepared them. They just taste better after they have cooled down some.
I make no claims that Dylan’s PB Balls will cure what ails you, but if you eat them in moderation (and are NOT allergic to any of the ingredients), I am almost positive your taste buds will smile and thank you!

Dylan’s PB Nut Balls
Ingredients
- 2 cups butter/margarine (melted)
- 4 cups graham cracker crumbs (smash them yourself or buy them pre-smashed)
- 4 cups powdered sugar
- 2 cups peanut butter (I prefer a little chunky mixed with creamy, but you can use just creamy style.)
- 3 cups semi-sweet chocolate chips (or whatever type of chocolate gets you the high you need!)
- 8 tablespoons creamy peanut butter (Yes, more PB!)
Directions
- Using a microwave (or metal bowl placed over a simmering pot of hot water), slowly and carefully melt the chocolate chips with the 8 tablespoons of creamy peanut butter IN A MICROWAVE-SAFE CONTAINER OR YOUR MAMA WILL BE FURIOUS WITH YOU! (Not that I have EVER done something like that before.). Stirring occasionally until it is smooth and blended. See note above if you’d rather substitute already liquid-type chocolate.
- Set this mixture aside, but keep it warm and do not let it thicken too much, so stir occasionally as needed.
- In a large-sized bowl mix together the melted butter, cracker crumbs, powdered sugar and the 2 cups of creamy PB.
- Roll into 2-inch diameter balls and dip each ball into the chocolate bowl until it is thoroughly coated. Then place each ball on wax paper placed on top of a flat baking pan.
- Refrigerate for a minimum of one hour before consuming.
